Mexican Street Corn Salad

Ingredients

  • 4 ears corn
  • 1.5 tbsp mayo
  • 1 garlic clove
  • 1 lime
  • 1/3 cup(s) scallions
  • 1/4 cup(s) crumbled cojita
  • 1/4 cup(s) cilantro
  • 1/4 tsp smoked paprika
  • 1 jalapeno pepper
  • 1/4 tsp sea salt

Instructions

  1. Grill the corn, 2 min per side until char marks form
  2. Chop scallions, garlic, and jalapeno pepper
  3. Add ingredients to large bowl and mix together
